banatjanin Posted December 8, 2014 Share Posted December 8, 2014 nego, vratni deo krmenadle, dakle ono parče između krmenadle i vrata, odatle se izvuče jedno 4 odreska debela oko 2 santima. sredina svetla, pa masna traka, pa okolo red tamnijeg mesa - tako je na preseku. odvojim od kosti, posolim ih dobro, složim u plastičnu posudu, zalijem uljem i ostavim dva dana u frizu. pre pečenja izvadim da se zgreju na sobnu temperaturu, jako zagrejem tuč i pljas: sa jedne strane par minuta, okrenem, isto sa druge, pečem toliko da meso pobeli, a da u sredini ostane tanka roza linija. ne bosti viljuškom, okreće se i vadi hvataljkom. meko, meko, meko, sočno, sočno, sočno. ovako nekako Quote Link to comment
