The Chaudeau , or Chaudau from chaud eau ( French : "Hot Water"), in German speaking area known as "wine château" or - older - even "Weinschaumbeiguß" is a sweet wine sauce, the original only from egg yolks , sugar and white wine and is in the water bath or a bain-marie is prepared [1] . It is served in glasses as an independent or as a dessert sauce for other desserts such as sweet puddings .
